60 dozen produced: matured in NEW (4 months) & re-shaved French oak for 22 months.
Bottled June 2009.
Colour: Purple.
Nose: Spice, chocolate, liquorice, cherry, oak.
Palate: Full warm cloves, red cherry; liquorice & chocolate finish with a dry oak grip
It will develop complexity for 5 to 10 years, possibly reaching its peak around 2020!
In future, THE WILSON OV-series will only appear in exceptional years.

2009 Sparkling Malbec & Cab Sauv: CHiLL Two
Description:
50~50 sparkling malbec and cabernet sauvignon. Made from our 31 year old vines; oak matured for 12 months, before 6 months bottle ferment Methode Champenoise. Complex dark berries, herbs, spice and oak flavours, with a dry fruit & oak finish. We call it 'a dry red lover's sparkling'. Typically Windy Ridge: you won't find another one like it (could just be the 5% 2004 Cab Sauv Malbec?).
